With every year that passes, the Tout Pres vineyard’s subtleness and delicate fruit structure are becoming increasingly pronounced in the wine. The bouquet fills the glass with spicy fruit, mineral elements and a hint of integrated French oak, with the darkness and essence of the Moorabool Valley true expressions of site. This wine exhibits primary and secondary flavours, which strengthen the overall integration for a seamless finish. It is a tightly packed combination of plums and undergrowth with an edgy acidity—and one of our favourite drops.
WINE PRODUCER
The Farr estate is located in the Moorabool Valley; a picturesque locale dotted with farms, dairies and vineyards, situated between Geelong and Ballarat, 100km southwest of Melbourne. Swiss settlers first planted vines in the area in the early 1800s, which were then destroyed by the Phylloxera virus. Gary Farr has worked all over the globe as a winemaker, starting at Bannockburn Winery in 1978, before heading over to Domaine Dujac in Burgundy, the Rhȏne Valley, and Oregon and California. A return to the Moorabool Valley saw Gary purchase land in 1994, on which he planted pinot noir chardonnay, spurred on by his experiences in Burgundy and seeing what incredible wines they could make there. Gary quickly gained a reputation as a superb winemaker, due to his desire to create elegant, perfumed wines that are earthy and savoury.
In 2009, Gary’s son Nick took over as chief winemaker, having also worked at wineries in Burgundy, Oregon and California, and closer to home at Rosemount in the Hunter Valley. Nick’s journey as a winemaker is grounded in Old World and New World practices, which he uses to great effect in his wines. While other wineries may have different ranges from the cheap and easy-drinking to more expensive bottles, By Farr is in the premium bracket, with an assortment of wines made from estate vineyards of viognier, chardonnay, pinot noir, gamay and shiraz. By Farr’s flagship wines are: the Tout Pres Pinot Noir, a blend of six clones over three slopes; the RP Pinot Noir, named in honour of Gary’s wife, Robyn; and the GC Chardonnay, named after Gary. Farr Rising is Nick’s own label, offering a rosé, chardonnay, pinot noir, gamay and shiraz.

WINE REGION
Boasting the title of ‘most diverse’ wine region in Australia, Victoria’s vintners know their wine. Despite being the smallest mainland state, Victoria boasts the most wine regions out of all the Australian states and houses a plethora of individual wineries, producing some of Australia’s best Pinot Noir, Fortified wine, Riesling, Chardonnay, Shiraz and Sparkling Wines.
In fact, back in the 1880’s Victoria was Australia’s largest wine producer. However, outbreaks of Phylloxera (aphid like insects that inject venom into the roots of grapevines) and a focus on gold saw wine production in the state grind to a halt. In the 1970s, Victoria’s wine industry enjoyed a resurgence, led by a new generation of talented winemakers keen to take advantage of the diverse climate and soils available in the region.
The world renowned Yarra Valley wine region, is located just an hour from the state’s capital, Melbourne. The region is best known for its Pinot Noir, being that it is the most planted grape and occupies over 36% of vines in the region. The Yarra Valley boasts huge variations in elevation, climate and even soil types, allowing winemakers to be able to produce single vineyard wines that are notable for being unique to their sites.
